Slow Cooker Beef and Broccoli

My family LOVES anything from the kitchen that's Asian and since my husband is from the Philippines, we eat a lot more of our meat and veggies with rice than we do potatoes. One of their favorite vegetables is broccoli so we try to eat it as much as possible. Here's an easy and delicious recipe for Beef and Broccoli in the slow cooker.  

Ingredients
1.5 pounds flank steak, thinly sliced
1 cup beef broth
2/3 cup low sodium soy sauce
1/2 cup brown sugar
1 tablespoon sesame oil
1 tablespoon minced garlic
1/4 teaspoon red chili flakes (optional)
4 cups broccoli florets
2 tablespoons cornstarch + 4 tablespoons cold water

To the slow cooker, add steak, beef broth, soy sauce, brown sugar, sesame oil, garlic, and chili flakes. Cook on high for  2-3 hours or low for 4-5 hours.

With about 30 minutes to go, whisk cornstarch and water together in a small bowl until dissolved. Add to the slow cooker and stir. Cover the slow cooker and cook for an additional 20-25 minutes.

Just before serving, place broccoli in a large microwave-safe bowl. Fill with ½ inch of water and microwave on high for 3 minutes. Drain, stir broccoli into slow cooker, and serve over rice. (I let it cook for another 10-15 minutes after I added the broccoli)

*For a little more kick, add 1-2 teaspoons of crushed red pepper flakes!

This recipe serves 4 so I doubled it for my large family. Leftovers? Yes, please!

    This is a great recipe. I made it for the first time last week, using quinoa as a base instead of rice. Delicious and definitely a keeper. Thanks Tracie for sharing!
